Carrot-top Pesto is our favorite thing to do with carrot-top greens. We prefer to use sunflower seeds rather than pine nuts since they give a more neutral flavor that lets the basil and carrot-tops pop. Mix with some oil before using as a sauce for pasta. Or just use as a spread on bread for a sandwich, or a dip for veggies.
