Baingan bharta, or baingan ka bharta in Hindi, is a popular vegetarian dish that originated in the Punjab region of North India. The name comes from the words baingan, which means eggplant, and bharta, which means mash or filling. Although this incredible dish originated in North India, it is prepared in many different variations across India! This recipe was adapted from Swasthi’s Recipes and substitutes green chiles with chipotle peppers in adobo (plus the addition of a few different spices) adding a smokey and tangy twist to this already delicious recipe.

  • Garlic – 4 + 3 cloves
  • Chipotle peppers in adobo (canned) – 2 ea
  • Oil – ~2T + 1.5 T
  • Ginger – ¾ inch
    • Or ginger powder – 1 t
  • Kashmiri or red chili powder – ½ t
  • Cumin – 1 T
  • Smoked Paprika – ½ T
  • Garlic Powder – ½ T
  • Soy Sauce, low sodium – ½ T
  • Liquid Smoked – 1 t
    • Optional if you want a more smoky flavor
  • Salt – 1 t + to taste

Directions

  1. Preheat oven to 460F. 
  2. Cut two long slits in each eggplant and place the two whole cloves of garlic in one slit and a chipotle pepper in the other. 
  3. Brush the stuffed eggplant with oil and place on a baking sheet or in a cast iron pan along with your tomato(es).
  4. Place the eggplant and the tomatoes in the oven and roast for 20 minutes.
  5. While your veggies are roasting, dice the leek and mince the garlic and ginger.

  1. In a heavy bottom pan, on medium heat add oil. Once hot add garlic and ginger (or ginger powder) and let saute until aromatic (around 30 to 60 seconds).
  2. Add the diced leek and let saute until they turn light golden.
  3. Remove your eggplant and tomatoes from the oven and dice your roasted tomato before adding to your pan with salt.
  4. Peel the skin off of your eggplant and add the eggplant flesh, garlic and peppers into a bowl. Using a fork, mash the ingredients together.
  5. Add the mashed eggplant mixture into your pan along with the remaining ingredients and mix to combine.
  6. Taste test and add more salt to taste.
