The sweet potato is an amazing and versatile tuber. As a Tuskegee University Alum I have learned a lot about the versatility of sweet potato through George Washington Carver. Although GWC is most known as the peanut man, he experimented with the growing and creation of products from many different crops, one of which is the sweet potato. Carver discovered more than 100 uses for the sweet potato. Some of the products that he created using this tuber were flour, stain, and paste.
Similar to the peanut, Carver introduced sweet potatoes as an alternative crop to poor farmers in the south as a source of food and as a way to improve their overall quality of life. GWC introduced the peanut crop as a way to help amend the soil that was broken down from the monoculture of cotton that had been growing on these farmers’ land for years, while the sweet potato served a different purpose. Even though the soil was not in the best shape after all of that cotton growth, the sweet potato was still able to grow well since it does not require many nutrients (besides potassium) to grow.
In order to pay homage to George Washington Carver and his many uses of the sweet potato, we’ve developed a very simple, savory sweet potato recipe that highlights the deliciousness and versatility of this magical tuber. Enjoy!
