Sesame Cucumber Salad

Lisa took inspiration for this recipe from a tiktok that starts off saying “sometimes you just need to eat a cucumber.” Well, sometimes Lisa just needs to eat a few cucumbers. Cold, crispy, and savory, it’s as refreshing as you could wish for. And taking almost no effort to make, it’s the perfect snack for the hot, humid, dead of summer.

Ingredients

  • Soy Sauce – 2 T
  • Oil – 2 T
  • Zhenjiang Vinegar – 1 T
    • Seasoning vinegar. Rice wine vinegar, white wine vinegar, or balsamic would also work.
  • Sesame Seeds, toasted – 1 T
  • Maple Syrup – 1 T
    • Honey or sugar would also work.
  • Mustard – 1 dollop
  • Vinegar – 2 T
    • Distilled vinegar, apple cider vinegar or any other would work.

Directions

  1. In a quart deli or medium bowl mix the soy sauce, oil, seasoning vinegar, sesame seeds, maple syrup, mustard, and vinegar.

  1. Thinly slice the cucumber. Use a mandoline if you have it. If not, try to slice as thinly as possible.
  2. Add the cucumber to the dressing and mix

Plate if you have the patience, but we usually just eat it straight out of the deli.
